Eggplant Antipasti

The Brazilian Mum’s Homemade Eggplant Antipasti now served in a jar.
For us, this is the taste of special occasions at home, where our Mums combined Eggplants, Onions, Capsicum and a good splash of Olive Oil.
In our version we added Zucchinis to make it even more delicious. Great addition to any snack table.
